During the wet winter months, the work on the farm takes place primarily indoors. This is when we are busy making jams and syrups to sell in the store throughout the year. In addition, our crew is busy in the greenhouse planting flower baskets that will be available after the first of April.

Wait, how do you make jam during the winter? Don't you need fresh strawberries?

 

Well, it takes a little bit of planning ahead. If you freeze the strawberries during the summer you will be able to thaw them to make jam in the winter! When you thaw them out, they will be mushy and juicy, which is not great for decorative berries. However, it is just perfect for making jam!
